Nutella stuffed crumble pie
Updated: Feb 6, 2021
It goes without saying that Nutella is a big hit in this house. Pretty much anything with Nutella in is a hit, but this pie disappeared even quicker than I expected.. The cake is super simple to bake and I promise you will be asked to bake it again and again. It also holds nice to the day after, if you manage to have any left..
I used a spring form of 20 cm in diameter to bake this, so the proportions in the recipe are perfect for that. My only suggestion is not to be cheap on the Nutella part. The best part of this recipe is the soft chocolate filling, but if you have too thin of a layer it will dry in the oven. So don't be shy when you fill and make sure your layer is at least 1 cm thick.
𝒩𝓊𝓉ℯ𝓁𝓁𝒶 𝒞𝓇𝓊𝓂𝒷𝓁ℯ 𝒫𝒾ℯ
200 gr butter, cold
270 gr all purpose flour (4 ½ dl)
90 gr caster sugar (1 dl)
1 tsp baking powder
2 tsp vanilla sugar (or 1 tsp vanilla extract)
1 egg yolk
Nutella or other chocolate spread
Pour all dry ingredients in the bowl of a food processor and pulse a few times to blend them (if you are using the vanilla extract, add it with the egg).
Cur the butter into cubes and add it to the dry ingredients, then process until a dough or paste begins to form, about 15 seconds.
Transfer to a large bowl, add the egg yolk (plus the vanilla extract if you are using that instead of vanilla sugar) and work the mixture with your hands until it comes together as a dough. Do not overwork it or you will warm the butter too much. If you feel the mixture is too dry or too wet you can add a little water or flower to adjust it.
Wrap the dough with plastic wrap and let it rest in the fridge for 20 minutes. In the meanwhile, turn on the oven to 180° C, static position.
Take out the dough from the fridge and use 2/3 of it to form the base and sides of your pie in a spring form (mine is 20 cm in diameter). Fill the base with a thick layer (at least 1 cm) of Nutella or other spread. Break the remaining pie dough into crumbs using your hands, then spread them evenly to cover the chocolate layer on your pie.
Bake in the middle of the oven for about 30 minutes and enjoy!
